How to Hide Out of Stock Products from Shopify Collections
Setting products that are out of stock to be hidden from your collections is incredibly easy, but make sure you're not missing out on potential sales before you do it.
Hiding out of stock products on Shopify is easy to do, but Back In Stock alerts are a better option.

Hide out-of-stock products from your Shopify collections

Go to your Shopify admin dashboard and enable inventory tracking

In your Shopify admin, go to Products > All products.

Click one of your products and In the Inventory section, select "Shopify tracks this product's quantity" from the Inventory policy list

Click "Save"

Go to each of your collections and set the automated collection conditions as follows:

Products must match - select "all conditions"

For Inventory stock - select "is greater than" and enter "0"
